Clean Eating Egg Tortilla
I got this recipe from Cooking Light Magazine and modified it a little bit. It’s a great healthy, clean, eating recipe that will help you stay full and keep on track with your calories and weight loss.
Ingredients:
1 Whole Wheat Tortilla or corn tortilla
1/4 cup of black beans
1/4 cup brown rice (optional)
1 egg
pepper
1/4 – 1/2 avocado
salsa
Directions:
Turn your oven on broil. Broil the tortilla with black beans and rice. (if rice isn’t hot, if it’s hot, put it on when you take the tortilla out.) It only needs 2-3 min in broiler.
Cook egg in skillet over medium heat. 2 min uncovered, 2 min with a lid on to set the yoke.
Place egg on top of tortilla, beans and rice. Sprinkle with pepper. Top with avocado and salsa.
ENJOY! It’s delicious, quick, simple and takes about 5 min!
