Anytime you’re grilling/cooking chicken, make an extra piece! It’s so easy to make a healthy lunch. Usually it will make enough for two lunches!
Through it into a salad and/or with brown rice and add fun stuff – yellow pepper, black beans, strawberries, avocado!

I get the Spring mix salad and below is a list of my toppings.
- red pepper
- green pepper
- shredded carrots
- cherry tomatoes
- black beans
- kidney beans
- brown rice – don’t knock it until you try it, it was good.
- grilled chicken
- grilled fish
- cottage cheese (not a “clean” option, but good for protein)
- pine nuts
