
Ingredients:
- 1 T chopped onion
- 1 tsp. jarred minced garlic
- 1 14 1/2 oz. cans chicken broth (if it seems dry, can add more)
- 1 T chili powder
- 1/4 tsp. crushed red pepper flakes
- 1 15 oz can black beans, drained and rinsed (I took this out just because it makes so much)
- 1 15 oz. cans red kidney beans, drained and rinsed
- 1 28 oz can petite diced tomatoes with garlic and olive oil
- Salt and pepper to taste
- 2 frozen chicken breasts (anytime after the chicken is cooked, I take it out and tear apart with a fork and put back in)
- 1 large sweet potato, peeled and cubed (I added these 2 hours before done because otherwise they turn to mush)
- 1/2 cup dry quinoa (put in half hour before done)
Directions:
I mixed everything lightly in the crock pot, and then let it simmer on low (10 hour setting). But everything is still done within 4-5 hours!
