In the winter when it’s too cold to grill chicken (because that’s my favorite way to have chicken) I use the slow cooker!
I love this because I can put a whole bag of frozen chicken (or however much I’ll need for that week) into the slow cooker, on low for 8-10 hours. My house smells so good, like a rotisserie and the chicken falls apart so well! Makes it REALLY easy to throw the chicken into a casserole later in the week.
Now in about 3-4 hours the chicken will look done. But if you take it out, it will be tough. So even though it’s on low for 8-10 hours, at about 6 hours it will be falling apart tender!
If I need some that night, I take it out, shred it and put it right into my meal. The rest, I shred, put in a glass container with a lid and sometimes I’ll put in some chicken juice as well. Put it in the frig and it is good to go for the rest of the week!
