Southwest black bean mini wraps
I have to give credit to my friend Julia for these! Here’s her recipe 🙂
I made these for my family but for myself, I put the mix in a romaine lettuce leaf (instead of the tortilla shell).
We have 5 eaters so here’s what I used:
3 Morning Star Chipotle Black Bean Burgers (thawed and broken up)
1 c of sugar-free salsa
1 red bell pepper
1/2 bunch of cilantro
1 medium tomato
1 cucumber
1/4 c of corn
1 tsp chili pepper
1 tsp crushed red pepper
5 soft tortilla shells
Mix all the ingredients together except the shells. I used a pizza cutter to cut the shells in half. Put a couple of table spoons of the mix in the middle of each shell. Wrap it up and toothpick it. Cook at 400 degrees for 10 minutes. I served it with toppers like shredded lettuce, chopped red onion, and of course, guacamole.
They are very filling!
