Southwest Veggie Taco
We usually eat chicken in our family, so anytime I come across a vegetarian recipe I’m always a little skeptical. I tried this recipe when doing the Ultimate Reset and I was pleasantly surprised!
This recipe is healthy, quick, easy, clean eating, helps with weight loss, tastes great, and is filling!
Ingredients
1 cup brown rice (do 1 cup water and 1 cup dry rice)
1 can black beans
1/2 cup frozen corn
1/2 tsp olive oil
1 tsp chili powder
1/2 tsp cumin
pinch of Himalayan salt
Corn or Whole Wheat Tortillas
Avocados
Salsa
Directions
Cook Brown Rice according to directions
Mix the next 6 ingredients in a skillet and warm. Add the brown rice once cooked and mix.
Put rice mixture into tortilla. Add avocado and salsa on top!
