I have to admit, I was a little nervous to try these!! But they turned out WONDERFUL and even my 4 year old loved them and had no idea she was eating sweet potatoes. Which she says she doesn’t like 🙂

Ingredients:

  • 2 sweet potatoes, peeled and cut into bite size pieces
  • 1 can of black beans, rinsed and drained
  • taco seasoning packet
  • taco shells – you can do soft shells, hard shells, or tostada shells

Optional items:

  • shredded cheese
  • sour cream – or PLAIN greek yogurt (actually a pretty good alternative if you’re trying to be healthier!)
  • lettuce
  • avocado
  • salsa

Directions:

  1. Steam peeled and cut sweet potatoes on stove (about 20-30 min)
  2.  Add black beans and taco seasoning packet (follow directions on packet for water)
  3. Mix together. Now some of the sweet potato pieces will turn into mush. You can either mush them all up or leave some as chunks. Do what’s best for your family
  4. Scoop into taco shell of your choice
  5.  Top with optional topping. Make sure you’re paying attention to appropriate portion sizes!
