Sweet Potato Dinner!
I have to admit, I can’t take credit for this. I got this idea from a friend of mine!
Sweet potato, black beans, corn, avocado, and sour cream :-).
Cook Sweet Potato at 400 degrees – poke holes in potato, wrap in aluminum foil and put on a cookie sheet covered in aluminum foil – trust me, it makes a mess!
Put corn and black beans in a skillet and warm up
Place potato on your plate, open like a regular potato, skin will pull off nicely
Layer with corn/black beans, avocado, and sour cream.
Add Salsa too if you wish!
It makes a LOT so you could probably do half a potato and keep the other half for lunch the next day.
